Worry. Who needs it? (And a recipe)

Apparently, my head disagrees with the title. I have had many sleepless nights where I have laid (that doesn't sound grammatically correct) awake doing nothing, but thinking about the bills we have/need to pay and how I'm going to pay them. I waste many precious moments worrying. It's Jessica. It's who I am. My parents say that at three I would worry about things I shouldn't have even know about. Sometimes I find myself worrying about other people.

Then my wonderful husband comes along. He's everything you could ask for in a husband...well, apparently, everything I asked for because God so graciously gave him to me! He may not show it in public, but he is a kind and caring man and he knows just what to say to make me feel better. He reminds me that God is carrying us at all times and that we will be fine. We've always experienced worse (though I don't know what you could define as worse since we are both unemployed and still have bills to pay) and made it through.

Just needed to get that off of my chest. Thanks for listening :)

Recipe of the Day:
Four Layer Yummy
1st layer --
  • 1 cup flour
  • 1/2 cup pecans, finely chopped
  • 1/2 cup butter, melted
Preheat oven to 350F.

Combine flour, pecans and butter and then press evenly until a 13x9" pan. Bake for 15 minutes and cool completely.

2nd layer:
  • 1 8oz block cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 8oz container of whipped cream
Mix cream cheese and powdered sugar with an electric mixer until light and fluffy. Fold in whipped cream. Spread over 1st layer and store in fridge.

3rd layer:
  • 1 5.9oz box instant chocolate pudding
Make pudding according to package directions and spread over first two layers.

4th layer:
Spread remaining layer on top.

I've been eating this since I was little. It's a major crowd pleaser. Haven't met someone who didn't like it. We also exchange the pudding for any kind of pie filling or other kinds of pudding. Hope you enjoy it!

Restless Spirit... (and a Banana Bread recipe)

So, if I could be anything, absolutely anything, I would be a gypsy. Keeping all of my stuff packed up in my truck and just going from place to place, but alas, life doesn't let us do this. Therefore, I am stuck in a small Texas town (not really stuck, since I chose to live here). Not that I don't love Texas. I've lived here all of my life and it will always hold a special place in my heart, especially the hill country and panhandle. But what I really love are mountains. Not just any mountains, I love the San Juan mountains (southern Colorado and northern New Mexico) and the Rocky Mountains come in a close second.

Thanks to my dad (whom I owe a lot too), I have spent much of my life in the mountains fishing, hiking, camping and skiing. I find myself content, happy, and best of all, at home, in the mountains. So about this time of year, every year since I could first remember, I have always got the urge to just pack my suitcase and hit the road. Some years it's not so bad as others, but the closer I got to adulthood, and now that I am here (and married to a wonderful man), I find myself struggling to not do just that. Pack up and leave.

Justin (loving husband) and I took our honeymoon, road trip style, to where I love to be. And guess what? He fell in love too. I can't even begin to describe how my heart sang with joy at his admission of loving it in New Mexico too.

So, as one of my final semesters in college is getting started, I feel myself beginning to grow an enthusiasm for an impending move to where I love...but only if I can get a job with my degree, so please pray that I do!

Banana Bread
3-4 bananas, smashed
1/3 cup butter, melted
1 cup sugar
1 tsp vanilla
1 egg, beaten
1 tsp baking soda
pinch of salt
1 1/2 cups flour

Preheat oven to 350F. In a large bowl, mix with a wooden spoon melted butter and smashed bananas. Then add in beaten egg, vanilla, and sugar. Sprinkle over baking soda and salt, then stir in. Add in flour last and pour into a 4x8 greased baking dish after mixing. Bake for one hour.

This is a great recipe. Popular in my house. Sweet, though. Very sweet. You could also add in some kind of nuts. I bet walnuts would be good in it.

Introduction

Hi guys. I'm Jessica, if you haven't figured that out already.

I am a college student, who is currently unemployed right now and extremely bored (when I'm not loaded down with homework.)

I cook... A LOT. When I get bored, I bake. I like showing my love for people through the food I make for them and am kind of a perfectionist when it comes to my cooking. I will be sharing recipes successes and failures when I can.

I want to use this blog to keep up with my friends and family and be able to vent here and not get abused for it. With my family spread out, it's hard to not to go see them all of the time and I want to be able to show them and my friends how things are coming along.

I am random, if you can't tell already. I go from one topic to another like a hummingbird to flowers.
